This is the way I’ve eaten Goa sausages as a kid and will do all my life with childlike enthusiasm till it’s time to totter into the Great Dive Up In The Sky or Judgement Day, whichever comes first. Amen.
1/2 of the contents of a packet of Goa sausages (cut into thumb-sized pieces)
2 medium onions (cut lengthwise)
1 large tomato (ditto)
2 green chillies (slit lengthwise)
3 medium potatoes (cut into discs)
In a large pan, on a medium-to low flame, add sausages.
Let cook till oil starts to ooze out of sausages.
Add onions, tomatoes, potatoes, chillies.
Stir till everything coated with lovely oil and sausage bits.
Check every now and then (or when beer can over and a replacement calls) if the mixture gets dry; then add little water.
Cook till potatoes done.
Best eaten with pau (soft bread).
