2 tsp toasted sesame oil (any oil will do)
1 tsp coriander seeds
2 tsp fish masala powder (be inventive, use what you have)
1 cup coconut milk
5 cm piece of ginger (cut into thin, thin, thin juliennes)
36 prawns (ask no questions!)
Fresh mint leaves, basil and coriander (all roughly chopped)
2 bulbs of spring onion (finely sliced; for garnish before serving)
Add coriander seeds and masala powder.
Fry for 15 seconds.
Add coconut milk, ginger and prawns.
Bring to a boil.
Simmer for five minutes till prawns are cooked.
Mix in the herbs, sprinkle the s. onions and serve with jasmine rice.
